I should have told you to hit the “Jump to Recipe” button a few lines ago if you're not into sports. Sorry. Don't hold it against me, and don't hold it against this Loaded Caramelized Onion Dip. Make it! You'll love it. Dip fresh vegetables in instead of chips if you want, or try it on crackers. I've tried all three.
How To Make This Loaded Caramelized Onion Dip
You're going to start off by caramelizing the onions. This is very easy but it takes a little time. I always do my onions while I'm already doing something else in the kitchen. You just have to keep an eye on them, but they don't require constant attention. I love caramelized onions on homemade pizza!
Set a frying pan over medium heat. Add a teaspoon of oil and heat it up. Add the onions, spread them out and let them cook for about 8 minutes or so. Just leave them! They'll get brown crispy edges. Once they do, add a bit of water. I usually set a mason jar of water beside the stove top so I don't have to keep filling a small measuring cup. Just pour some in, stir the onions and let them cook again. The water will loosen up all the brown flavor filled bits at the bottom of the pan. Once the water cooks off, add more. Repeat this for 20-30 minutes, or until the onions are where you want them.
The last thing to cook is the bacon. I chop mine really small and then fry it up to very crispy.
Then it's just a matter of mixing everything together. In a medium bowl, whisk together the Greek yogurt and mayo. You could change these ratios if you like, I just like less mayo - mayo feels more fatty and oily on my tongue the yogurt feels more creamy and fresh. Totally up to you and your taste preferences.
Next I add in the Worcestershire sauce and the spices, and whisk them in.
After this, I switch to a spatula and fold in the caramelized onions, chopped parsley, grated cheese and the cooked bacon. For the cheese I just measure up a 50 gram portion of a block of sharp cheddar and the finely grate it. You could use store bought, pre-shredded if it's easier - use about ½ cup.
Lastly, taste for seasoning. I find that mine never needs the salt. But I always add pepper. I love black pepper.
Loaded Caramelized Onion Dip
- 1 onion (finely diced)
- 1 teaspoon oil
- ⅔ cups plain Greek yogurt
- ⅓ cup mayonnaise
- ½ teaspoon Worcestershire sauce
- ½ teaspoon garlic powder
- ½ teaspoon onion powder
- 2 slices bacon (chopped)
- ¼ cup chopped fresh parsley
- 50 grams cheese (grated (½ cup))
- freshly cracked black pepper (to taste)
- First off, caramelize the onions. To do this, heat a pan over medium heat and add a teaspoon of oil and then the diced onion. Cook for about 6-8 minutes, undisturbed until there are brown crispy edges to most of the onions. Stir them, then add a bit of water and turn the heat down to medium low. Continue cooking until the water cooks away and then continue the process of stirring then adding water and cooking it away for about 20-25 minutes – or until the onions look nice and brown and caramelized to your preference.
- Chop up a few slices of bacon and cook in a frying pan for a few minutes, until cooked to your liking. I like mine very crispy.
- Let both the onion and the bacon cool while you assemble the rest of the dip. To do so, in a small mixing bowl add the yogurt and mayo and whisk together well. Add the Worcestershire and the spices and mix it well, again with the whisk.
- Switch to a spatula and mix in the bacon, parsley and cheese. Mix well. Taste for seasoning. Add salt if you think it needs it. I think the salt from the bacon and cheese is enough. Add black pepper, I like a lot!
