    Pumpkin Pie Overnight Oatmeal

    Pumpkin Pie Overnight Oatmeal - Easy overnight oats recipe with pumpkin puree, chia and flax seeds, a homemade pumpkin pie spice mix + a spiced syrup.

    I love overnight oats.  Have you tried making overnight oats?  If you like oatmeal, but don't have time in the morning for more than grabbing a jar out of the fridge, then overnight oats are for you.

    And if you love fall and it's warm and snuggly flavors then these Pumpkin Pie Overnights Oats, are definitely for you.

    How to Make Pumpkin Pie Overnight Oats

    First, make up my Pumpkin Pie Spice Mix. (You can also use store bought).

    In a medium bowl, mix together the oats, chia seeds, flax seeds, coconut sugar, the spice mix and a pinch of salt.

    In a 4 cup glass measuring cup, pour in the can of coconut milk.  Fill it up to 3 ⅔ cups with cold water.   Add the pumpkin puree and the vanilla extract and whisk until smooth.

    Add the wet to the dry ingredients and mix well.

    How do I store overnight oats?

    How you store your overnight oats once they are mixed up, will depend on how you'll eat it.   If you're just going to be at home and not in a rush, then you can pour the mixture into a large glass container with a lid and store in the fridge overnight.

    If you're going to be on the go and want to be able to grab one portion, then carefully measure the mixture into four jars with lids.  Make sure to evenly distribute the liquid in the jars.  In the morning, just grab a jar and spoon and go!

    Either way, make sure to stir the oatmeal before you eat it.

    Pumpkin Pie Overnight Oats

    Chilling Time : 8 hours
    Total Time : 5 minutes

    Ingredients
      

    • 2 cups rolled oats*
    • 3 tablespoons white chia seeds
    • 1 tablespoon ground flax seeds
    • 2-4 tablespoons coconut sugar
    • 2 teaspoons DIY pumpkin pie spice
    • 1 pinch of salt
    • 1 can of coconut milk (mixed with water to make 3 ⅔ cups liquid)
    • ½ cup pumpkin puree
    • 2 teaspoons vanilla extract

    Instructions
     

    • In a large container with a lid, mix together the oats, chia seeds, ground flax seeds, coconut sugar, spice mix and salt.
    • In a 4 cup measuring container, pour in the coconut milk and then add enough water to make 3 ⅔ cups of liquid. Add the pumpkin puree and vanilla extract and whisk together.
    • Add the wet ingredients to the dry ingredients and mix together.
    • Place on lid and set in the fridge overnight.

    Notes

    *I use half rolled oats and half large flake oats.

    Pumpkin Pie Spice Simple Syrup

    Try this easy homemade pumpkin pie spice simple syrup on top of Pumpkin Pie Overnight Oats or as a treat in your next hot coffee.
    Prep Time : 2 minutes
    Cook Time : 5 minutes
    Total Time : 7 minutes

    Ingredients
      

    • ½ cup water
    • ½ cup granulated sugar
    • ½ teaspoon DIY pumpkin pie spice
    • ½ tsp vanilla extract

    Instructions
     

    • Mix together water, sugar, and the spice mix together in a small pot.
    • Bring to boil and let go for 5 minutes.
    • Remove from heat and stir in vanilla extract.
    • Let cool and pour into jar with a lid. Store in fridge.
    • Stir teaspoonful into hot drink and stir until melted in.
